Pumpkin Butter

Have not tried but thought it sounded interesting.

Microwave Pumpkin Butter
Makes about 2 Cups
Serving size = 1 Tablespoon

1/4 cup dark brown sugar, packed
2 Tbs sugar
1/4 cup water
1/2 tsp allspice
1/4 tsp ginger
1/4 tsp cloves
1/4 tsp nutmeg
1/2 tsp cinnamon
1-1/2 cups pumpkin - 1 can

Mix the two sugars, water, allspice, ginger, cloves, nutmet, and cinnamon in a 4 cup glass measure. Microwave on High 3 minutes; stir.
Add pumpkin a microwave on High for 5 minutes.
Let cool and refrigerate.
Keeps several weeks in refrigerator or can be frozen.
Use as you would apple butter.
